Hello pretty parsnips!
I peeled two of these.
And then shredded them with a cheese shredder. It was not a lot of fun, but it was necessary.
Added about half a cup of chopped scallions
and 3/4 cup bread crumbs.
Mix them up a little and add an egg, scrambled a little.
Salt, pepper, and (because I am obsessed) some smoked paprika.
Melt a 2 tablespoons of butter in a skillet.
Split the parsnip concoction into 4ths and form patties. Place them in the skillet.
Let them get browned on one side, 3-4 minutes. Then flip.
Let ’em brown up on the other side and enjoy!
