Mmmmm. Breakfasts for the week!
1/3 cup sugar
2 tsp vanilla
2 cups while wheat flour
1 tsp baking soda
1/2 cup Greek yogurt
1/2 tsp salt
1/3 cup milk
3/4 cup freshly squeezed orange juice
1 tsp orange zest
1/2 cup cranberries
Prheat oven to 350. Place muffin cups in muffin tins and spray with cooking spray.
Mix sugar, yogurt, and egg until creamy and light yellow. Add vanilla.
Whisk together, in a seperate bowl, flour, baking soda, and salt.
To the wet ingredients, add orange juice and milk. Add dry ingredients and mix well.
Fold in orange zest and cranberries.
Spoon into the muffin tins. Bake for 18-20 minutes or until toothpick inserted into the middle comes out clean.
Makes 12 muffins.
