KentBars!

These are my take on ClifBars. We don’t know anyone named Clif, but we do know a Kent. And he hung out at our house today. So these were named after him!

Peanut Butter Chocolate Chip KentBars

Chocolate Peanut Butter KentBars

2 1/2 cups rice krispies
2 cups quick cooking oats
1/2 cup macadamia nuts
4 tbsp ground flaxseed
1/3 cup white chocolate chips
1 cup cranberries
2/3 cup honey
1 cup peanut butter

Mix all dry ingredients and set aside.

Melt peanut butter and honey. Pour over dry mixuture. Mix well (I had to use my hands). Press firmly into a baking sheet and refrigerate until set.

Cut into 24 bars.

Nutritional info: 193 calories; 9.7g fat; 24.3g carb; 2.6g fiber; 4.8g protein.

Cranberry White Chocolate KentBars

2 1/2 cups rice krispies
2 cups quick cooking oats
3/4 cup peanuts, chopped
4 tbsp ground flaxseed
3/4 cup mini chocolate chips
2/3 cup honey
1 cup peanut butter

Mix all dry ingredients and set aside.

Melt peanut butter and honey. Pour over dry mixuture. Mix well (I had to use my hands). Press firmly into a baking sheet and refrigerate until set.

Cut into 24 bars.

Nutritional info: 188 calories; 10.1g fat; 21.9g carb; 2.5g fiber; 5.6g protein.
